Deniabetes for De Holiday

Christmas is almost here.  Can't we just pretend we don't have diabetes and live like everyone else?  If we just ignore it, won't it go away?  I know what I'll do.  I'll focus on something totally different and push diabetes out of the way.  I'll go to school and get a degree or go on vacation for a week.  If I am traveling, surely I don't have to deal with my disease because vacations are supposed to be fun, right?

I don't want to have this thing hanging over my head any more than you do.  The only reason I write about my experiences is to keep myself in check and if it helps you too, then that's great.  That's why this is a soliloquy - I'm talking to myself - I'm yelling at myself when I've been bad - and I'm patting myself on the back when I've been good.  Most of the time I'm scratching my head and asking, "How do I fix this - once and for all?"

Choosing denial is like making a decision to take your shoes and socks off and go wading in the nasty old mud puddle out in the back yard after the rain storm.  You can go out there and stick your feet in the mud.  The mud may squish between your toes and it might feel pretty good, but I sure hope there aren't any pieces of glass or metal in that puddle that you could cut your foot on! 

Diabetes, even during the holiday season, is nothing to mess with - there are some serious complications that come on quite suddenly after years of uncontrolled blood sugar.  Just because you make a decision to ignore it doesn't mean it's not taking a toll on your health.

I know that eating is not as fun as it used to be - believe me, I know!  I also know that we're not going to be perfect every single day, but to turn your back in complete denial of your disease is not using the wonderful brain that God gave you.  It's dangerous and a little like playing Russian roulette.

I believe Type 2 Diabetes is the most challenging disease to face.  It's not exactly unpredictable, but just about the time you think you have it figured out, the rules change.  If the delicate balance gets thrown off just a little bit - too much carbohydrate and too little protein, for instance - then wham - your blood sugar is out of whack again.  Not enough insulin, the blood sugar raises.  Too much insulin and you plummet.  And heaven help us when we get sick!  Who knows which way the blood sugar will go then?  Mine usually goes through the roof!  

This disease is tricky and needs to be dealt with, not denied.  I hope and pray we can all end the trend of "deniabetes".  I like the idea of finding peace by confronting diabetes with courage and being victorious in the management of my disease.  I want to control it - I do not want it controlling me!  Control freak?  Yeah, you bet!  When it comes to my diabetes, you bet I'm a total control freak!

Today is OATMEAL MUFFIN DAY!!!!!!!!!!!!!  In celebration it's perfectly fine to enjoy one muffin with your cup of coffee this morning!  Excellent!  Good fiber and good for you!!!  Check out this cool recipe for the no flour banana oat muffins - thanks to Lady with the Red Rocker for sharing this fun easy (low carb) recipe!!!


{No Flour Added} Banana Oat Muffins

2 1/2 cup oats (quick cooking)
**1 single serving cup of vanilla yogurt (or about 1 cup)
**2 eggs
3/4 cup granulated sugar or 2 Tbs Stevia sweetener
1 1/2 tsp baking powder
1/2 tsp baking soda
2 bananas
Nuts to sprinkle on tops of muffins (optional)

*Note: These muffins tend to stick to paper liners. I just sprayed the inside of the liners with cooking spray before I filled them. They came out of the paper beautifully. Just FYI! :D


** I modified the recipe just a little bit.  I was careful in the brand of yogurt I chose - careful not to get one that has high-fructose corn syrup in it - because that's the same thing as sugar!  Also, I always use an egg substitute instead of actual eggs in muffin recipes.  Other than that I followed it to the letter - and my muffins turned out great!
