Alkaline and Delicious

Organic Greens Salad with Fried Tempeh
- Organic greens
- Organic raisins
- Organic red, yellow, green, etc. peppers
- Organic pumpkin seeds
- Organic broccoli and/or other veggies
- Chia seeds, flax meal
- Himalayan salt, pepper
- 1/3 cup Daiya mozzarella shreds http://www.daiyafoods.com
- 1-2 tbsp organic olive oil + 1-2 tbsp organic red wine vinegar
 
Heat 1/4″ of organic or Italian extra virgin olive oil in a pan on medium heat. Cut organic tempeh into 1″ squares. Lightlife (http://www.lightlife.com) is my favorite brand and can be found at Whole Foods or Kroger’s health foods section. There are several “flavors” including soy, flax, grain, and there’s even a tasty “smokey tempeh bacon” flavor. Add tempeh to pan, being careful not to splash the oil and burn yourself. Brown tempeh on one side, then turn individual squares or strips to brown the other side. If necessary, pat with a paper towel to remove excess oil.
Toss tempeh with above ingredients. Serve.

You may recall I blogged a while back that I will be accepting a challenge from the Coach - a free 30-day offer.  I'm hopefully gonna buckle down and get the remainder of this weight off.  As most of you know - since 1992 I've lost a total of 80 pounds!  I have just 30 more to lose, and let me tell ya - I'm ready for them to LEAVE!  Buh bye!!!

I've been giving the poor Coach some grief on facebook lately - poor guy!  I'm determined to make this a really fun experience and I'm expecting nothing but positive results!  This weight absolutely has to go - and this is the year it will leave - forever!  YESSSSSS!!!

There is one plain and simple truth about good health.  Eating clean, exercise every day and drinking water with lemon is essential.  It's a simple matter of re-prioritizing and putting everything into perspective.  What matters most - eating the pretty but unhealthy cupcake, or eating a perfectly wonderful and filling salad (getting 3 x the food) and feeling energized and equipped to face the day?  I found another recipe on the WebMD website from Eating Well.com. 

                                                                            Chicken Waldorf Salad
1/3 cup low-fat mayonnaise
1/3 cup nonfat or low-fat plain yogurt
2 teaspoons lemon juice
1/4 teaspoon salt
3 cups chopped cooked chicken breast **
1 medium red apple, diced
1 cup halved red or green grapes
1 cup sliced celery
1/2 cup chopped walnuts, divided

Whisk mayonnaise, yogurt, lemon juice and salt in a large bowl.  Add chicken, apple, grapes, celery and 1/4 cup walnuts.  Stir to coat well.  Serve topped with the remaining 1/4 cup walnuts.

** If you want cooked chicken in a hurry, the easiest way to cook it is to poach it.  Place boneless, skinless chicken breasts in a skillet or saucepan.  Add lightly salted water (or low-sodium chicken broth) to cover and bring to a boil.  Cover, reduce heat to low and simmer gently until the chicken is cooked through and no longer pink in the middle, 10-15 minutes.  (1 pound raw boneless, skinless chicken breasts = about 2 1/2 cups chopped or shredded cooked chicken).
